From my office at the Disneyland Resort in Anaheim, my business trips took me to the four enchanting parks of Walt Disney World in Florida, and aboard Disney Cruises exploring destinations from Alaska to Europe and even the beaches of Hawaii opening the Aulani Resort Sales Center!

 

Now, with Thanksgiving just around the corner, I'm excited to share how we can bring a taste of those cherished Disney memories to our holiday table. Here are three delightful Disney-inspired recipes that will transport you back to those unforgettable experiences with every bite!

 

🥣 Appetizer: Remy’s Vegetable Soup

To kick off your Thanksgiving meal, let’s conjure up a magical starter inspired by the beloved film "Ratatouille"—Remy’s Soup! This vibrant and nutritious dish is a wonderful way to celebrate the flavors of Disney while delighting your guests.

Ingredients:

2 tablespoons olive oil

1 onion, diced

2 cloves of garlic, minced

1 carrot, diced

1 celery stalk, diced

1 zucchini, diced

1 yellow squash, diced

1 red bell pepper, diced

1 can diced tomatoes

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cooked macaroni (optional)

Grated Parmesan cheese, for serving

 

Instructions:

 

  1. In a large pot, heat the olive oil over medium heat. Sauté the onion until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  2. Mix in the diced carrot, celery, zucchini, yellow squash, and red bell pepper; cook until softened (about 5 minutes).
  3. Pour in the diced tomatoes and vegetable broth, stir in dried basil and thyme, and bring to a boil. Reduce to a simmer for 15-20 minutes.
  4. Puree the soup until smooth using an immersion blender or regular blender.
  5. If desired, stir in cooked macaroni and simmer for an additional 5-10 minutes.

For Brine:

 

1 gallon water

1 cup kosher salt

1/2 cup sugar

2 tablespoons onion powder

1 tablespoon garlic powder

1 tablespoon chili powder

1 tablespoon paprika

1 tablespoon ground pepper

1 teaspoon rubbed sage

1 teaspoon ground cumin

 

For Spice Rub:

 

3 tablespoons onion powder

2 tablespoons paprika

1 tablespoon garlic powder

1 teaspoon ground pepper

1 teaspoon ground cumin

1/2 teaspoon rubbed sage

3 tablespoons vegetable or light olive oil

 

Instructions:

 

  1. Rinse turkey legs and pat dry. Prepare the brine by boiling the water with all brine ingredients, then cool to room temperature before refrigerating.
  2. Add turkey legs to brine and soak for 4-6 hours. Rinse, dry, and apply the spice rub, letting the legs sit for about an hour.
  3. Smoke the legs at 225°F for 4-6 hours or until the meat is tender and nearly falling off the bone.

  2. Pour the filling over the cake bottom and bake at 325°F for about 35 minutes, checking for doneness.
